Shrimp and Cucumber Sunomono

It's a Japanese sunomono dish made with shrimp and cucumber.

Ingredients:

  • 1 small cucumber, thinly sliced into rounds
  • 1/4 lb shrimp, deveined
  • 2 Tbsp vinegar
  • 1 Tbsp sugar
  • 2 Tbsp dashi soup
  • 1 tsp soy sauce
  • 1/2 inch piece ginger root, peeled and cut into thin strips

Preparation:

Boil shrimp in salted water for a couple minutes. Drain and let cool. Remove the shell off. Put 1/2 tsp of salt over cucumber slices and set aside for 5 minutes. Squeeze cucumber slices to remove the liquid. Mix vinegar, sugar, dashi, and soy sauce in a bowl. Add cucumber slices and shrimp in the bowl and mix together. Serve in a bowl and top with ginger strips.
